Bread Machine Makes Soaked Flour Whole Wheat Bread

Bread machines can be used to make homemade bread from soaked flour or soaked grains. Let me explain how I make mine. First of all, bread machines are there for the laziest of us bread makers, but l like mine, so here's what l found works for me.

First of all, let me share my recipe for making soaked flour 100% whole wheat bread with the bread machine.

3/4 cup water (revised to 2 cups water by Editor)
3 1/2 cups fresh ground whole wheat flour
2 tablespoons wheat gluten
2 tablespoons olive oil
3 tablespoons honey
3 1/2 tablespoons raw apple cider vinegar
1/2 teaspoon Celtic Sea Salt
6 1/4 teaspoons yeast


Combine water, flour, gluten, olive oil, honey, and vinegar in bowl. Let those ingredients soak anywhere from 12 to 24 hours.

After soaking, add salt and yeast. Make sure to put the salt in later, or it could decrease the benefits from soaking your flour.

Put the entire mixture into the bread machine. Then follow directions of bread machine.

This will produce a 100% whole wheat loaf that is 6 inches high by 4 1/2 inches wide.

I prefer the taste of fresh ground flour baked loaves better. The choice is up to the baker.

I have experimented quite a bit with these loaves, trying to find the right size, texture, and taste. The whole wheat, fresh ground, is still the best. I use only organic flour and all my ingredients are fully organic, except the yeast and salt.

With heavy breads and when using the bread machine, especially if you are soaking them in apple cider vinegar for 12 to 24 hours, you need to make sure that the bread dough is fairly tacky, or stretchy. That is why l use 2 tablespoons of wheat gluten with my recipe - just to be on the safe side.

l use more yeast and a little less salt than typical because I find this works best with the bread machines.

I noticed that with the bread machine's baking bucket, it takes this larger amount of yeast to rise the bread large enough so it doesn't burn the loaf.

The ratio I use for soaking my whole grain flour in the apple cider vinegar is about 1 cup of flour to 1 tablespoon of apple cider vinegar.

My bread machine is by "Black and Decker." Actually, the bread machine was a gift to my wife on our wedding day many years ago. It's still working very good!

Is The Required Water Amount In Bread Machine Recipe Correct?

Are you sure the recipe only requires 3/4 cup water to 3 cups flour? Should I be adding more water to get it to mix properly?


Try Adding A Little Extra Water to The Bread Machine Recipe

I would try adding a little extra water to the soaked grain homemade bread recipe for the bread machine, if the flour and other ingredients in the soaking mixture are not moist enough.

Add that extra water just a little bit at a time, and mix together your ingredients in your soaking mixture. You will know your soaking mixture consistency is right when it looks like the picture below.

My Bread Falls Apart After Making In Bread Machine

Can someone tell me how to make it so that my soaked flour bread made in the bread machine doesn't fall apart?

I used the measurements on the above posted bread machine soaked flour bread recipe by Steve, and then the next day put everything in my bread machine, and the bread falls apart when I try to make a sandwich. It's also a strange texture so it needs to be warmed up to taste right.

Please help me make soaked flour bread in a bread machine successfully,

Wheat Gluten Was Missing Ingredient When Making Soaked Flour Bread Machine Recipe

Okay the soaked flour bread recipe made in a bread machine problem was fixed. I was missing the wheat gluten.

This time what happened is my bread pan was overflowing in the machine. I forgot to change the size of the loaf to 1.5, but I'm not sure if it was this or perhaps the amount of yeast?

I am sure further experimenting will allow you to learn how to prevent your bread from overflowing in the bread machine bread pan. If you feel your bread is rising too much, you can certainly cut back on the yeast a bit.

Modifications When Making Bread With Bread Machine

I will send off whole wheat bread pictures made in the bread machine as soon as I figure out how to transfer pictures from my new Blackberry to the internet. My guess is I could send them to my e-mail.

Anyhow, my family depends on homemade bread because my son loves the whole wheat bread and my husband eats a meat sandwich every day at work.

Plus, I am pregnant and so I am following the Brewer's diet where I have to have five whole grains per day (among everything else).

With that taken into consideration, I'm a little scared to decrease the yeast load because I am not sure what is the minimum amount needed to rise the bread and I can't really afford to mess up the bread since it takes so long to soak, knead and bake, and we need homemade bread every day.

What I am doing until I can find some time to experiment, is allowing the bread machine to knead the bread. Then I'm taking it out and baking it in the oven with a bread pan, after it rises significantly of course.

This makes for a delicious and beautiful looking loaf.

By the way, Amazon.com has the best deals I've seen so far on buying whole wheat berries. I started buying whole wheat in bulk on-line to save me the time of having to drive.

I wonder how long wheat flour can keep in the fridge after it is freshly ground? What I will probably have to do is separate in baggies each 3 1/2 cups of flour I grind, just the first time around in case I use too many berries and have excessive flour.

Also, I wonder how many wheat berries can make about 3 1/2 cups of flour?

No rush with the pictures, sounds like you are very busy. And a very exciting time for you being pregnant! Your child will be very lucky having a mother that knows how to make nutritious homemade bread.

I wish I would have received that book when I first got married. I can't even imagine the health improvements that would occur with our nation's children if parents read that book.

Here is information on whole wheat flour shelf life. Just remember, nothing will ever surpass freshly ground and then used whole wheat flour.

1 cup of whole grain equals about 2 cups of freshly ground flour.

Thanks for the tip on obtaining wheat berries at on-line at Amazon.com. Sometimes it is hard to find a good bulk supplier of whole wheat grains close by.

I obtain my whole wheat grains, that I use for bread making, locally. I use these exact same wheat grains, or wheat berries, to also grow wheatgrass at home.

Grinding Grains and Using Sweeteners

Thank you so much for your encouragement on making homemade bread with the bread machine and for your health tips. I have a little time because I soaked a batch of flour last night, and my whole wheat berries just arrived this morning.

Do you mind telling me how to prepare whole wheat berries for grinding? Is it much like corn? And I assume they don't need soaking until they are in flour form, judging by the recipe.

Also, I want to experiment with the sweetener. My blood sugar is elevated from being pregnant. I feel better eating just meat and green vegetables really.

But my diet does call for whole grains, so I want to cut the additional carbs, especially sugar. I know that agave is supposed to be low-glycemic but it does cost a bit more than blackstrap molasses.

I am wondering how I could adjust the measurements to leave out the sweetener all together, or reduce the molasses possibly, and, I wonder if I were to leave out molasses, how would my bread taste and how would that affect the texture since every liquid and dry ingredient seems to count?

Some other things to keep in mind are that I am intolerant to fruit, not fructose, but fruit, and honey as well.

Is Agave Good Sweetener For Homemade Bread?

Alright, you got your precious wheat berries delivered. Now you are ready to grind them into flour. There really is no preparation required.

Once I purchase my wheat berries, or wheat grain from a good supplier, I just go ahead and put them in my Nutrimill Grain Mill as I show in this Nutrimill Grain Mill demonstration. If I saw any foreign particles mixed in with the grains, I would surely take them out. But, hopefully the company you bought your grains from did a good job of filtering out any unnecessary debris from your grains already.

That is right, your wheat berries don't need soaking until they are ground into flour form, as you know I explain in my Nutrimill soaked flour bread recipe page.

Some people like to soak their whole, entire, 100% grain in water to get the grain to actually sprout. They make their homemade breads from this truly sprouted grain. Homemade bread made from an actual sprouted grain is more nutritious just like soaked flour homemade bread.

The whole wheat bread, made with 100% whole wheat flour, from the entire whole wheat grain, is a complex carbohydrate food and many say this bread does not affect their glycemic index.

You do not need to adjust the other bread making ingredients, if you do not want to use honey as your sweetener. The other homemade bread making ingredients stay the same. Some bread bakers choose to use no sweetener in the bread recipe. If you choose no sweetener actually in your recipe, you can always later add a sweetener of some sort on top of your fresh slice of warm bread.

I think blackstrap molasses or maple syrup is a good sweetener choice in your actual recipe. Just experiment with amounts to get the desired flavor and sweetness. If the dough is extra moist from the added ingredients, just add enough non-soaked flour to get the texture right as I show in the pictures on the bread making recipe page.

Why Did Soaked Flour Bread Loaf Sink While Baking in Bread Machine?

I followed the above soaked flour bread recipe for a breadmaker, using 2 cups of water. I let the flour soak for 15 hours.

All seemed to be going well with the bread dough until the baking period in the bread machine. While baking in the breadmaker, the bread loaf then sunk in the middle. The dough had risen beautifully beforehand, but then sunk while baking it.

Any ideas on how to prevent my bread loaf from sinking in the middle while baking in the bread machine, as I am really keen to get this right!

How to Make Soaked Flour Bread with Bread Machine and Sweetener Idea

I'm a different Charlotte, but have a similar health situation. I have been following a diet using the principles of macrobiotics with good success. The sweetener of choice in this diet, is Barley Malt Syrup, which I purchase at my health food store.

Also, I use my bread machine, but only to make the dough. I put the soaked mixture with added gluten and then add the yeast and salt. Then I use the "dough" setting, which mixes and kneads the dough. I watch it during the kneading process to get the right consistency, adding flour until it is just right.

Then, let it rise in the machine until the end of the cycle. The machine keeps the environment at a perfect temperature for rising. You can use the whole recipe this way, as it only does the first rising.

When the dough cycle is finished, I continue with the homemade bread recipe and shape the dough into loaves and let it rise in my own pans until double, and then bake in the oven.

I have never been satisfied with baking the loaves in the bread machine, but I sure do appreciate the effortless dough mixing and kneading it does for me!

1. Create soaked mixture and soak
2. Add additional recipe ingredients to soaked mixture
3. Place completed mixture into bread machine
4. Mix all ingredients into dough with the bread machine
5. Add flour to get texture of dough just right
6. Let your perfect dough rise one time in the bread machine
7. Remove this risen dough from the bread machine
8. Reshape dough into loaves and place in your own bread pans
9. Let rise for second time, until double in size
10. Bake accordingly
11. Enjoy bread!
