Can I Replace Cider Vinegar With Whey or Yoghurt For Homemade Bread Recipe?

Can I replace raw apple cider vinegar with whey or yoghurt for my homemade bread recipe?

I had been using a different recipe than this one which worked wonders the first few times, and without changing anything, my breads now all come out sunken in the middle?

I will try your homemade bread whole wheat recipe, but can I replace the vinegar with whey?

Yoghurt Substitution For Apple Cider Vinegar Might Be More Difficult With Homemade Bread Recipe
by: Eryn Paige

Hello,

I would think you could more easily substitute the whey for the raw apple cider vinegar, more so than the yoghurt.

If you substitute the raw apple cider vinegar with the yoghurt as your acid medium choice, you will now have a heavier dough that could have a more difficult time rising.

The yoghurt is a heavier acid medium choice than the cider vinegar. The yoghurt would seem to be a more difficult substitution in terms of your homemade bread turning out successfully.

I tried making the homemade bread with buttermilk as my acid medium choice, and I just could not get the recipe to turn out for me.

You will have to experiment to see how the whey or yoghurt turns out for you.

With the Braggs Raw Apple Cider Vinegar as my acid medium choice, my bread turns out perfect and delicious every single time.

Please come back and share how your bread turned out with your chosen modifications.

Good luck!

Eryn

Thanks For Getting Back To Me On Homemade Bread Acid Medium Options
by: Anonymous

Thanks for your acid medium recommendation for homemade bread response.

I tried the homemade bread recipe first with apple cider vinegar, and it turned out excellent. Next time, I made the whole wheat bread with whey as my acid medium choice and one extra teaspoon of yeast, as the first loaf with whey but no extra yeast was very small (still good though). With the whey and extra one teaspoon of yeast, my homemade bread turned out even better.

Thanks for an awesome homemade bread soaked grain recipe!

You wouldn't happen to have a breadmaker recipe which uses sprouted grains to create a good tasting bread like your recipe would you?

I've tried many times in all different ways and have had no success, just a bread that is sunken in the middle, wet, and dense.

Regards,
Kim

Whey As Acid Medium Choice For Homemade Bread Worked
by: Eryn Paige

Hi Kim,

Thank you for sharing how using the whey as your acid medium choice in the homemade bread recipe turned out so well.

You have inspired me to make the homemade bread recipe with the whey now. I will remember to use the extra one teaspoon of yeast to help the homemade bread rise.

I do not know of a good breadmaker or bread machine recipe which uses sprouted grains. If I hear of such a recipe, I will post it.

Thank you again for sharing about your success with using whey as your acid medium choice in the homemade bread recipe.

Eryn
