This is how I make homemade bread. I started using a 100-year-old Universal bread mixing hand crank pail. Sometimes I still use it, or a electric mixer...comes out the same. I have three.
Whole Wheat bread is heavy and it will need to be modified to 1/3 whole wheat to 2/3 unbleached flour.
I started making homemade bread after the Navy. Every night the cook would make fresh homemade bread and we would start eating it while watching the midnight movie--it was Great.
Just modify the below recipe with more or less whole wheat flour to your liking.
Bread recipe makes 3 loaves
I put this directly in the mixing bowl with dough hook:
2 Cups warm water 2 Pk Yeast (2 Tbsp) Let it sit until it swells 5.5 oz. Evaporated Milk (2/3 Cup) KEY! 1/3 Cup Oil (I used olive oil) 1/4 Cup Honey 1 Tbsp salt mix
Add 8 Cups Flour Mix low speed with dough hook Cover and let rise to double size (I put the bowl in the oven at proofing temp...just slightly warm) Punch down and divide into 3 pieces Shape and put in 3 greased bread pans (I use butter) Put them in the oven, middle rack and let rise again Check in about an hour. Don't let it rise too high Bake 350º for about 30-35 min. from Proof Temp. or cold oven. You can smell it when it's close to the end. Take bread out of the pans and lay them on their side on a rack. Tapping the bottom should sound hollow. Cover the bread with a damp dish towel to trap some of the steam--this will make the crust soft. I turn the bread over to the other side after a while. Bag the two loaves that didn't get eaten after they have cooled. :)
The dough can also be saved in the refrigerator for another time. I also use this to make pizza.
