Soaked Grain Bread Recipe is Terrific

Your soaked grain bread recipe instructions and photos were most helpful. I was doing a search on the internet and found your site.
I've been looking for a recipe for a pre-soaked grain bread. I have a copy of Nourishing Traditions and am familiar with the work of Dr. Weston A. Price.
However, being dairy-sensitive and also wheat-sensitive (not allergic) it's been hard finding a good recipe to make bread digestible.
I read your recipe thoroughly and tried it myself using Spelt and white flour (it's in the wheat family but I can eat it).
Your recipe was the best recipe I ever tried. Not only was it easy, but the results were terrific! I made two large delicious loaves of bread.
The raw organic apple cider vinegar worked well as a soaking medium for the grain. I use vinegar for cereals but thought it wouldn't work for bread, because the bread recipes in Nourishing Traditions use buttermilk, sourdough starter or grapes. None of this appealed to me.
I made the bread in my KitchenAid mixer. I used raw honey and coconut oil.
I thank you very much for helping to take some of the mystery for me out of making this bread. I plan to try the recipe again with a mixture of grains (like a 7 or 12 grain blend).
