What Do You Think About Dough Enhancer For Homemade Bread?

I have a question about using Dough Enhancer in my homemade bread. If I use the Dough Enhancer in my homemade bread, could the soaking of the flour be skipped?

I have only made homemade bread twice. I also have a Nutrimill ordered.

I Do Not Use Dough Enhancer In Homemade Bread

Hi Charlotte,

I do not use Dough Enhancer in my soaked flour homemade bread recipe. When I went through my breadmaking classes, the instructor included the Dough Enhancer and the Vital Wheat Gluten in her recipes.

I decided to try my recipes without the Dough Enhancer and the Vital Wheat Gluten, figured maybe I could save some money without sacrificing taste and texture.

To my surprise, I found out my bread did not taste any worse. I really could not detect a difference, so I figured I like to keep things simple and just left those ingredients out.

You will need to decide if you feel there is a detectable difference in your loaves of bread with the Dough Enhancer and Vital Wheat Gluten added. If you notice the difference and like the difference with those two extra ingredients, then go ahead and put them in.

If you don't notice a real change in your bread, then you can certainly go ahead and leave them out. Just go ahead and experiment. See which way you prefer your bread - with or without the Vital Wheat Gluten and Dough Enhancer.

OK you also asked, "If I use the Dough Enhancer, do I still need to soak my grains?"

Absolutely, yes. The Dough Enhancer will have no effect on the anti-nutrients in the flour. The Dough Enhancer will not aid in predigesting the whole wheat flour and releasing those beneficial enzymes. If you want those numerous benefits, you will need to soak your flour.
