I haven't tried your soaked grain bread recipe, but will soon. I need to find some heavy duty bread pans. All I can find are the cheapy ones in town. Please help if you can. Thank you for all your wonderful information.

However, I don't understand your recommendation of nonstick pans when otherwise promoting healthy choices in preparing bread.
Does Sally Fallon address the use of nonstick pans in her book? I threw all my nonstick pans out!
Eryn's Reply: I threw all of my nonstick pans out too, along time ago - except for my bread pans.
I use enamel pans for my cooking. But yes, I must confess, I do use nonstick pans for my bread baking and I have to say they work quite well for bread making.
I like how light weight they are and they stack easily, one within another, on my shelves taking up less space. I have 6 large bread pans and about 20 small bread pans and stocking and stacking that many takes up less space than some other non-toxic bread pans. Plus the stoneware was a bit more than I wanted to spend.
When I was taking my bread making classes, the teacher used nonstick pans and did all of her bread baking in them. I bought the nonstick bread pans she had success with.
Another advantage is that since they take up less space, I can fit more of the bread pans in the oven at the same time.
I do also recommend stoneware choices. If you find some good stoneware pans or other good bread pans that you use for bread making, let me know so I can share that information here.
I am sure Sally Fallon would not recommend using nonstick pans - not sure if she mentioned that in her book.
I suppose I should buy some nice stoneware bread pans or maybe some other non-toxic bread pans. At least I am not doing any stirring in my nonstick pans, nor are there liquids moving around on the internal surface of the pan where maybe tiny pieces of the coating could get into the food.
I just kind of put that dough in them, let them rise, bake and take out the loaf. For this bread making use, I personally feel OK about that choice.
My bread pans still look like new and there is no chipping nor any signs of wear in those pans. When I am done baking with them, I just gently wipe them out with a moist towel, no abrasives to affect the surface are used.
Thanks for pointing that out Elizabeth. Nonstick pans are not the healthiest choice, but for my bread making purpose and usage I guess I just am not too worried.
But once again, you are correct, other pans besides nonstick pans are definitely the healthier choice.
