Why Is Soaked Grain Bread Not Rising?

I ground my winter hard wheat with a coffee grinder, soaked the grains, and worked the recipe. However, the dough refuses to rise. I keep looking for something I may have missed but can't find anything.

Was Saf Instant Yeast Added And Is It Still Good?

Did you add your dry active yeast, the Saf Instant Yeast?

If you did, is it fresh enough? Did you check the expiration date on it?

After I buy my Saf Instant Yeast, I open it and store it in the refrigerator in a sealed glass jar. I would say it works great for 1-2 years. It seems to kind of start losing its "punch" or rising powers after that 1-2 years of being stored in the refrigerator.

If you store the Saf Instant Yeast in your cupboard after it has been opened, it says it is best to use it within one year.

If you have working Saf Instant Yeast, your bread should rise like a charm.
